CAKE MIX PEANUT BUTTER CHOCOLATE NUT BLONDIES — A  yellow cake mix gives you a head start on these chewy bars, packed with peanut butter, chocolate chips and chopped pecans.

Friends, sometimes you need to be able to whip up a quick treat at a moment’s notice. Say, if a craving strikes, or your kid tells you right before he goes to bed, that he needs something for his class party tomorrow. We’ve all been there.

Well, these Cake Mix Peanut Butter Chocolate Nut Blondies are the answer to all of your last minute baking needs!

I made these but I used Swiss chocolate cake mix and crunchy peanut butter. I omitted the chocolate chips but added pecans. They turned out DELICIOUS! So easy too. Will definitely make them again. ~ Cathy

If you’ve ever made cake mix cookies, you know how soft and chewy they turn out. And these cake mix blondies are just the same. Totally soft and chewy and wonderful.

Not to mention, so quick and easy to throw together. In fact, this is a recipe I often have my boys make, it’s so simple!

And the possibilities for changing things up are endless. You could use different types of nuts (or none at all), and change-up the baking chips you use too.

Peanut butter and butterscotch chips are always a good call–and sometimes I just throw them all in. If you have lots of random, leftover hand fulls of baking chips in your pantry like I do, this is a great way to use them up!

I have not tried making this with other flavors of cake mix, but I am sure there are some possibilities there too. Like a chocolate based cake mix cookie bar, for example.

Again, opportunities to get creative here are pretty unlimited. Especially with all of the varieties of cake mixes available these days.

You’ll notice the recipe doesn’t specify what size of cake mix to use, but I find it works well with pretty much any standard cake mix.

And they’re constantly changing the amount of cake mix in a box anyway, so I’m hesitant to call out anything specific. But just for the record, I used Duncan Hines brand.

  • Vegetable oil

Ingredients 

  • 1 yellow cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/2 cup creamy peanut butter
  • 1 cup chocolate chips
  • 1/2 cup chopped pecans or walnuts

Instructions

  • Preheat oven to 350 degrees. Line a 9×9 inch baking pan with parchment paper.
  • With an electric mixer, mix the cake mix, eggs and oil. Add the peanut butter and mix until smooth. Stir in the chocolate chip and chopped nuts.
  • Spread the batter into the prepared pan. Bake for about 15 minutes, or until golden brown.
  • Remove to wire rack to cool completely before cutting into squares to serve.

    I made these but I used Swiss chocolate cake mix and crunchy peanut butter. I omitted the chocolate chips but added pecans. They turned out DELICIOUS! So easy too. Will definitely make them again.
