- Yellow cake mix
- Instant vanilla pudding mix
- Eggs
- Flour
- Almond extract
- Poppy seeds
- Canola oil
- Powdered sugar
- Milk
Easy Poppy Seed Cake
Ingredients
For the cake
- 1 package yellow cake mix
- 1 3.4 oz. package vanilla instant pudding mix
- 1 cup water
- 4 eggs
- 3 tablespoons flour
- 2 teaspoons almond extract
- 1 tablespoon poppy seeds
- 1/2 cup oil
For the glaze
- 1 cup powdered sugar
- 1 teaspoon almond extract
- 2 tablespoons milk
Instructions
- Preheat oven to 350 degrees. Generously grease and flour a 10-inch bundt pan.
- Mix all ingredients for cake together in a large bowl and beat with an electric mixer until smooth. Pour into prepared pan.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before turning onto a wire rack to cool completely.
- Whisk together ingredients for glaze in a small bowl. Spoon glaze over cooled cake.

I work in a kitchen at a retirement home. We have a poppy seed cake recipe but it’s kind of involved and I was expecting groceries soon (I work on my own baking and making soups at night). Anyway this one is a dump and mix. That works when you have a ton of produce to put away. In a rush I accidentally of double the amount of instant pudding when making the recipe larger (so that would be 2 packs of jello pudding if using original recipe). Still turned out amazing. I came into work to notes from the day staff and the residents to make it again and soon. Yes, some days professionals cheat. This is a good recipe, made a lemon glaze. As I was suppose to be making lemon poppy seed. I think they like this one better then the one we use.

This cake is tasty and could not be easier. It took me more time to grade and flour my silicone Bundt pan than to make the cake! I prefer more poppy seeds, so tripled to 3 T. I also used a sugar-free pudding mix with good results. Not sure if it needed it, but I added about 1.5 T sugar and 1.5 T flour to replace some of the pudding mix volume. (Sugar free mix has less volume/weight than regular mix.) I think I’ll add a bit more oil or perhaps some milk to yield a little more moistness if I make this cake again.

How badly will white cake mix mess this up? This cake is an all-time favorite of mine & it gets the most compliments from others, too. During this ongoing pandemic, who’d’ve ever guessed that yellow cake mix would be in such demand?
