Baked Rice Pilaf
Rice and toasted orzo are mixed with colorful vegetables and chicken broth, then baked until light and fluffy.

Servings: 6 servings
- 2 tablespoons butter
- 1/2 cup diced onion
- 1/2 cup diced celery
- 3 cloves garlic minced
- 1 cup dry orzo pasta
- 1 cup white rice
- 2 1/2 cups chicken broth
- 1/2 cup diced carrots
- 1/2 cup diced red pepper
- Salt and pepper to taste
- 2-3 green onions chopped
- 2-3 tablespoons fresh chopped parsley
Preheat oven to 375 degrees. Melt butter in a large skillet over medium heat
Sauté onions celery and garlic until softened, about 3-4 minutes. Increase heat to medium-high and stir in orzo. Toast until orzo is a deep, golden brown, 5-7 minutes.
Stir in the rice, carrots and peppers and pour into a large, covered casserole dish. Pour one cup of the chicken broth over the rice mixture and stir.
Cover and bake for 25 minutes. When time is up, remove lid and stir in the remaining broth. Cover and bake for an additional 35 minutes, or until rice is tender.
Fluff rice with a fork, then season with salt and pepper, to taste. Stir in green onions and parsley just before serving.
