Balsamic Roasted Mini Peppers
Sweet, colorful mini peppers are roasted with garlic, olive oil, balsamic vinegar and a dash of salt in pepper in these incredibly easy, healthy side dish that goes with almost any meal.

- 1 lb. sweet mini peppers
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 cloves garlic minced
- Salt and pepper to taste
- Fresh chopped herbs for garnish (optional)
Preheat oven to 450 degrees. Line a large baking sheet with parchment paper.
Arrange the peppers in an even layer on the baking sheet. Drizzle with olive oil and balsamic vinegar.
Sprinkle with minced garlic, then salt and pepper. Toss on the baking sheet with your hands or a large spatula.
Cook for about 20 minutes, or until peppers are blistered and just beginning to char. Garnish with fresh chopped herbs before serving, if desired.
