Berry Watermelon Feta Salad
Watermelon, strawberries and blueberries are tossed with mint and feta cheese in a honey-lime poppy seed dressing to create this light, refreshing summer salad.

- 3 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon poppy seeds
- 6 cups cubed watermelon
- 2 cups sliced strawberries
- 1 cup blueberries
- 1/2 cup crumbled feta cheese
- 1/3 cup mint leaves torn
- Pinch of salt
In a large bowl, whisk together honey, lime juice and poppy seeds.
Add the watermelon, strawberries and blueberries and toss to coat.
Gently stir in the feta cheese, then sprinkle with fresh mint. Season with a pinch of salt, if desired.
Refrigerate until serving. Eat within 4 hours for best texture and flavor.
