Best Cilantro Lime Rice
White rice is cooked in chicken broth then tossed with lime juice and fresh cilantro in this popular Tex-Mex side dish.

- 1 cup low-sodium chicken broth
- 1 cup water
- 1 tablespoon butter
- 1/2 teaspoon salt
- 2 cups white rice
- 3 tablespoons lime juice divided
- 2 teaspoons lime zest
- 1/3 cup chopped fresh cilantro
Bring chicken broth, water, butter and salt to a boil over high heat. Stir in rice and 1 tablespoon lime juice. Reduce heat to low. Cover and simmer for about 20 minutes, or until rice is tender.
Remove from heat and stir in 1-2 tablespoons more lime juice (to taste), lime zest and cilantro. Season with additional salt and pepper, if needed. Serve immediately.
