Costco Quinoa Salad (Copycat Recipe)
This delicious salad is protein packed with quinoa and lentils, plus plenty of vegetables and tossed in a tangy vinaigrette. Perfect as a healthy lunch, light dinner, or side dish.

For the dressing
- 1/4 cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- Salt and pepper to taste
For the salad
- 2 cups cooked cooled quinoa
- 1 cup canned lentils rinsed and drained
- 1 red pepper seeded and diced
- 1 small tomato seeded and diced
- 1 medium cucumber diced
- 1 cup kale finely chopped
- 2-3 tablespoons freshly chopped cilantro
In a large bowl, whisk together the ingredients for the dressing.
Add all of the salad ingredients to the bowl and toss to mix well. Season with salt and pepper, to taste.
Serve at room temperature, or refrigerate until ready to serve.
