Crispy Air Fryer Potato Chips

- 2 large Russet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- Pinch of pepper
- 1/2 teaspoon paprika
- Minced fresh parsley for garnish
Using a mandoline, thinly slice potatoes. Transfer to a large bowl and cover with ice water. Soak for 15 minutes, then drain.
Lay potatoes on a paper towel lined baking sheet and dry thoroughly. Place potatoes in a large bowl and drizzle with oil. Sprinkle with salt, pepper and paprika and toss to coat well.
Preheat air fryer to 375 degrees. Add potatoes to air fryer basket in a single layer. Cook for about 15 minutes, shaking basket twice during cooking, until potatoes are golden brown and crispy.
Garnish with fresh parsley before serving.
