Crunchy Asian Coleslaw
Shredded cabbage and carrots are mixed with onion and cilantro, then tossed with a slightly sweet and savory soy sauce dressing in this colorful slaw that's perfect with almost any meal.

For the slaw
- 8 cups shredded cabbage
- 3 green onions sliced
- 1/2 cup thinly sliced red onion
- 1-2 cups shredded carrot
- 1/2 cup chopped cilantro
- Crushed peanuts for topping
- Toasted sesame seeds for topping
For the dressing
- 3 tablespoons vegetable oil
- 2 teaspoons sesame oil
- 1/4 cup rice vinegar
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 1 clove garlic minced
- 2 teaspoons grated ginger
- 1/4 teaspoon chili flakes
- Salt and pepper to taste
In a large bowl, toss together the cabbage, green onion, red onion, carrots and cilantro.
In a small bowl, whisk together the ingredients for the dressing. Add desired amount of dressing to the slaw mixture and toss to coat well.
Just before serving, add crushed peanuts and sesame seeds, if desired, or serve then on the side.
