- 2 English cucumbers cut into 1/2 inch chunks
- 4-5 Roma tomatoes cut into 1/2 inch chunks
- 1/2 cup thinly sliced red onion
- 1/4 cup water
- 1/4 cup apple cider vinegar
- 1 tablespoon sugar
- 2-3 tablespoons chopped fresh dill
- Salt and pepper to taste
In a large bowl, toss together cucumbers, tomatoes and red onions.
In a small bowl, whisk together water, vinegar, and sugar. Pour over cucumbers and tomatoes.
Add dill and toss to coat well. Season with salt and pepper, to taste. If possible, refrigerate for at least on hour before serving.
