Kale and Almond Salad with Lemon and Parmesan
Fresh kale is tossed with almonds and Parmesan cheese in a tangy lemon vinaigrette.

- 1 large bunch of kale
- 1/2 cup slivered almonds toasted
- 1 shallot minced
- 4 tablespoons lemon juice
- 2 tablespoons white wine vinegar
- 4 tablespoons olive oil
- 2/3 cup finely grated Parmesan cheese
- Salt and pepper to taste
Wash and dry 1 large bunch of kale and chop or slice into bite-size pieces.
In a large bowl, toss kale with 1/2 cup slivered almonds. Set aside.
In a small bowl, whisk together 1 shallot minced, 4 tablespoons lemon juice, 2 tablespoons white wine vinegar, and 4 tablespoons olive oil.
Toss kale with desired amount of lemon vinaigrette. Sprinkle with 2/3 cup finely grated Parmesan cheese and toss to coat. Season with salt and pepper to taste before serving.
