Mini Quiche Bites
Beaten eggs, crispy bacon and cheese are baked into premade phyllo shells in these delicious bite-sized quiches that are perfect for breakfast, brunch, and even snacking.

- 30 premade phyllo cups 2 packages
- 4 eggs
- 1/4 cup heavy cream
- 1/4 cup finely shredded cheese
- 1 1/2 teaspoons flour
- Pinch of salt and pepper
- Pinch of paprika
- 3 pieces bacon cooked crisp and crumbled
- 1 tablespoons freshly chopped chives plus more for garnish
Preheat oven to 350 degrees. Arrange phyllo shells on a large baking sheet.
In a medium bowl, whisk together eggs and cream. Stir in cheese, flour, salt and pepper, paprika, bacon and 1 tablespoon of chives.
Spoon the mixture into the phyllo cups, filling almost to the top. Bake for 10-12 minutes, or until eggs are set and slightly puffy.
Garnish with additional chopped chives, if desired.
