For the crust
- 3/4 cup graham cracker crumbs
- 1 tablespoon sugar
- 2 tablespoons butter melted
For the filling
- 1 8 oz. package cream cheese, softened
- 1 14 oz. can sweetened condensed milk
- 1/4 cup lemon juice
- 1 teaspoon vanilla
- 1 21 oz. can cherry pie filling
In a small bowl, stir together the graham cracker crumbs, sugar and butter. Divide crumbs evenly among dessert dishes or glasses.
With an electric mixer, beat cream cheese until smooth. Add the sweetened condensed milk and beat to mix well. Beat in the lemon juice and vanilla.
Spoon the cheesecake mixture over the graham cracker crust. Top each cheesecake with cherry pie filling. Refrigerate until ready to serve.
