Pineapple Coconut Ice Cream
Coconut milk and fresh pineapple come together with a hint of lime in this creamy, cool dessert that is perfect for summer!

- 3 cups fresh pineapple cubed
- 1 can full-fat coconut milk
- 2/3 cup sugar
- 2 tablespoons lime juice
- 1/2 teaspoon vanilla
- 1/2 teaspoon coconut extract
Place all ingredients in a blender and process until smooth. Refrigerate mixture until very cold, at least 3 hours.
Remove from refrigerator and whisk mixture to blend. Pour into ice cream maker and freeze according to manufacturer's instructions.
Store in an airtight container in the freezer until ready to serve
