Pork Ginger Rice Bowls

Ground pork is cooked with fresh ginger and brown sugar, then served over rice with a selection of toppings, like cool, crisp veggies, herbs, and chopped peanuts.

Ingredients

  • 2 cups rice
  • 6 green onions chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoons vegetable oil
  • 1 tablespoon minced fresh ginger
  • 1-2 cloves garlic minced
  • 1 pound ground pork
  • 1-2 tablespoons sweet chili sauce
  • Salt and pepper to taste

Optional toppings

  • Diced cucumber
  • Shredded carrots
  • Other diced veggies
  • Chopped fresh herbs
  • Chopped peanuts
  • Peanut sauce
  • Sriracha sauce
  • Lime wedges
  • Sesame seeds

Instructions

  • Cook rice according to package directions.
  • Meanwhile, make the pork by whisking the green onions, soy sauce, brown sugar and red pepper flakes together in a small bowl.
  • Heat the oil in a large skillet over medium high heat. Add the ginger and garlic and cook until fragrant, about one minute.
  • Stir in the pork and cook, breaking up the meat as you go, until pork is cooked through. Stir in the soy sauce mixture and cook for 2-3 minutes more, until liquid is slightly reduced. Stir in sweet chili sauce and season with salt and pepper, to taste.
  • Serve rice in bowls, topped with pork mixture and any optional toppings.
