Quick No-Bake Peppermint Thins

- 2 packages Andes mints
- 30 Ritz crackers
- 1/2 cup crushed peppermint candy
Line a large baking sheet with parchment paper. In a microwave safe bowl, melt the Andes mints at 50% power in one minute increments until smooth.
Dip crackers in the melted chocolate, allowing the excess to drip off. Place dipped crackers on prepared baking sheet. Drizzle any remaining chocolate over the dipped crackers.
Sprinkle the crushed peppermint evenly over the crackers. Chill for 5 minutes, or until set. Store in an airtight container at room temperature.
