Rainbow Pineapple Salsa
Loads of colorful vegetables combine with sweet, fresh pineapple and lime juice in this refreshing, colorful salsa.

Servings: 4 -6 servings
- 2 cups fresh pineapple diced
- 1 14.5 oz. can black beans, rinsed and drained
- 1 cup frozen corn thawed
- 2 Roma tomatoes diced
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 1 jalapeno pepper seeded and finely diced
- 1/3 cup red onion diced
- 1/3 cup cilantro chopped
- 2-3 tablespoons lime juice
- Salt and pepper to taste
In a large bowl, combine all ingredients and toss to coat with lime juice.
Cover and refrigerate for at least one hour before serving. Serve with tortilla chips.
