Simple Slow Cooker French Onion Soup

Parmesan Cheese Grater
- 1/4 cup butter softened
- 6-8 sprigs fresh thyme
- 1 bay leaf
- 5-6 large yellow onions thinly sliced
- 1 tablespoon sugar
- 8 cups low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 small baguette sliced
- 4-6 ounces Gruyere cheese shredded
Place butter, thyme, bay leaf and sliced onions in a lightly greased slow cooker. Stir to combine, then sprinkle with sugar. Cover and cook on high for 6-8 hours, or until onions are soft and dark golden brown. Stir occasionally during cooking.
Discard thyme sprigs and bay leaf. Add beef broth, Worcestershire sauce, salt and pepper. Cover and cook on high for 30-60 more minutes.
Preheat broiler. Arrange baguette slices on a large baking sheet. Top with shredded cheese. Broil for about 2 minutes, or until cheese melts and beings to turn golden.
