Slow Cooker Red Curry Meatballs

- 2 13.5 oz. cans coconut milk
- 2-3 cloves garlic minced
- 2-3 tablespoons red curry paste
- 1/4 teaspoon ground ginger
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon curry powder
- 1/8 teaspoon cayenne pepper
- 3 tablespoons flour
- 3-4 dozen small precooked frozen meatballs
- 1-2 tablespoons lime juice
- 1/4 cup chopped fresh cilantro
- Hot cooked rice for serving
Lightly grease a slow cooker. Add coconut milk, garlic, curry paste, ginger, salt, pepper, curry powder, cayenne and flour and whisk to combine.
Add meatballs to slow cooker and stir to coat with sauce. Cover and cook on low for 5-6 hours.
Just before serving, stir in lime juice and cilantro. Serve over hot cooked rice.
