Swedish Sugar Dreams Cookies (Drömmar)

- 1/2 cup + 2 tablespoons butter
- 1 3/4 cup sugar
- 1 teaspoon vanilla
- 2/3 cup vegetable oil
- 1 teaspoon baker's ammonia
- 2 cups flour
Preheat oven to 280 degrees F. Line two baking sheets with parchment paper.
In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Mix in vanilla.
Gradually mix in the oil and stir until combined. Stir in the baker's ammonia.
Add the flour and continue mixing until well incorporated.
Shape the dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Bake for 17-20 minutes, or until firm and cracked on top.
