- 4 cups chicken broth
- 1/2 cup uncooked quinoa
- 2 medium sweet potatoes peeled and diced
- 1 15 oz. can black beans, drained and rinsed
- 1 14.5 oz. can diced tomatoes
- 1 cloves garlic minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 2 cups cooked shredded chicken
- Salt and pepper to taste
Add everything but the salt and pepper to a lightly greased slow cooker.
Cook on low for 6-8 hours, stirring occasionally. Just before serving, season with salt and pepper, to taste.
