Tex-Mex Tater Tot Casserole
A Southwest seasoned ground beef filling with black beans and corn is topped with cheese and crunchy tater tots in this remake of a classic hot dish.

- 1 pound ground beef
- 1/2 cup onion chopped
- 2-3 cloves garlic minced
- 1 small jalapeno seeded and diced
- 2 red or yellow bell peppers chopped
- 2 tablespoons flour
- 1 package taco seasoning mix
- 3/4 cup milk
- 8 ounces shredded pepper jack cheese
- 1 14 oz. can black beans, rinsed and drained
- 1 cup frozen corn
- Salt and pepper to taste
- 1-2 bags frozen tater tots
Preheat oven to 400 degrees.
In a large skillet brown ground beef, onion and garlic and cook until beef is no longer pink. Add the peppers and saute until just tender.
Add the flour and taco seasoning and cook a few minutes more. Gradually stir in the milk and bring to a simmer. Simmer 2-3 minutes until mixture is thickened.
Add half the cheese, along with the black beans and corn. Season with salt and pepper, to taste.
Sprinkle the remaining cheese over the ground beef mixture. Top with frozen tater tots.
Place skillet on a sheet pan and bake for 20-30 minutes, or until tater tots are golden brown and crispy. Let stand 5 minutes before serving.
