The Best Vanilla Bean Shortbread

- 2 cups flour
- 1/2 teaspoon salt
- 2/3 cup granulated sugar
- 3/4 teaspoon vanilla bean powder or 1 tsp. vanilla
- 1 cup cold butter cubed
- Sparkling sugar for dusting (optional)
Heat oven to 325 degrees. Line an 8 or 9-inch baking dish with parchment paper.
In the bowl of a food processor, pulse together the flour, sugar, salt and vanilla bean powder. Add the butter and pulse until fine crumbs form.
Pulse a few more times until some of the crumbs come together. Do not over process. The dough will be crumbly.
Press the dough evenly into the prepared pan. Bake until golden, 40-50 minutes (depending on pan size). Transfer to a wire rack and cut into bars while still warm. Sprinkle with sparkling sugar.
When cooled, remove shortbread from pan and recut before serving.
