- 1 3-4 pound pork roast
- 2 tablespoons paprika
- 3 tablespoons brown sugar
- 1 teaspoon pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 cup diced onion
- 2-3 teaspoons chopped chipotle peppers in adobo
- 1/4 cup apple cider vinegar
- 3/4 cup water
In a small bowl, combine the paprika, brown sugar, pepper, cayenne, oregano, garlic powder, onion powder and salt. Rub into the pork roast, covering all sides
Place onion, chipotle pepper, vinegar and water in bottom of slow cooker. Carefully add the pork, so you don't wash off the spices.
Cover and cook on low for 8-10 hours, or until pork shreds easily with a fork. Remove pork from slow cooker and shred with two forks (remove any large fatty pieces and discard).
Before serving, add juices from slow cooker to pork as desired for flavor and moisture.
